Eating vegetarian dishes that are even more delicious than meat --- [Dry-Roasted Potato Slices]
Potato slices get a double dose of oil and patient pan-frying until golden, then a final toss with chili bean paste, peppers and cilantro that outshines any meat dish.
Instructions
- 1
Slice the potatoes and soak them in clear water, cut the green peppers into small sections and set aside.
- 2
Chop the cilantro into small sections and set aside.
- 3
Cut the chili peppers into small sections and set aside.
- 4
Drain the water from the potatoes, pour peanut oil into the pan—twice as much as usual for cooking—add the potatoes to the pan and stir-fry until they change color, then remove them.
- 5
Leave some oil in the pan, add the red chili and doubanjiang and stir-fry until fragrant, then add the green pepper and cilantro; if you are afraid it will stick to the pan, add a little light soy sauce.
- 6
Finally, add the potato slices and stir-fry, add salt, and after a moment, it can be served.
