Egg and milk blossoming steamed bun
Tall blossoming mantou enriched with egg, milk, and a touch of lard, steamed until they split open into soft, snow-white peaks with a lightly sweet crumb.
Instructions
- 1

Prepare the main ingredients: zero-calorie sugar, eggs, milk, high-sugar-tolerant yeast, and all-purpose flour.
- 2

Mix the milk, zero-calorie sugar, and high-sugar-tolerant yeast evenly, and let it sit for five minutes.
- 3

Put 270 grams of flour, one egg, and the mixed yeast milk into the container.
- 4

After the flour forms a dough, add 10 grams of lard and continue kneading into a smooth dough.
- 5

Roll the dough into a long shape, divide it into four equal portions, and knead each into a bun shape. Use a knife to make three marks on the surface without cutting through, as shown in the picture, and tidy up the shape.
- 6

After everything is made, place it on the steamer paper with the cut side facing down, cover it with a lid, and let it proof.
- 7

The properly proofed steamed buns are 1.5 times larger than before, feel lighter when picked up, and spring back when gently pressed. This means they are well fermented.
- 8

Place it in a skillet and pan-fry one side until browned.
- 9

As shown in the picture, pan-fry with the cut side facing down.
- 10

Then place it in the steamer, with the pan-fried side facing up, and steam for 18-20 minutes after the water boils.
- 11

The egg custard flower buns, both fluffy and soft, are finished.
- 12

Sweet and delicate, the steamed bun has the texture of bread.
