Egg and Mugwort Soup
A light home-style soup in which tender mugwort leaves and marinated pork slices are simmered in ginger broth, then swirled with beaten egg for a fresh herbal flavor.
Instructions
- 1

Mugwort should be washed several times, as its growing environment has an impact, with some weeds, sand, and so on; use only the tender leaves for consumption.
- 2

Slice the lean meat and season it with oil, salt, and cornstarch.
- 3

After the water in the pot comes to a boil, add oil, ginger slices, and garlic.
- 4

Add the slices of lean meat and cook for 2 minutes.
- 5

Add the mugwort and cook for about 5 minutes.
- 6

Then pour in the eggs and stir them apart.
- 7

Finally, add salt to taste.
