Egg Songhua Sausage

Seasoned beaten egg studded with diced century egg is funneled into sausage casings, tied off and cooked, slicing into marbled rounds, a nostalgic homemade cold cut.

Boil the century egg and remove the shell.

A small amount of edible alkali.

    Dissolve by adding water.

  7. 7
    Step image

Pour in the beaten eggs and mix well.

  8. 8
    Step image

    Sift through once.

  9. 9
    Step image

Cut the century egg into small cubes and put them into the beaten eggs.

  10. 10
    Step image

Clean the sausage casing and tie off one end tightly.

  11. 11
    Step image

Attach the enema to the other end of the intestine.

  12. 12
    Step image

    Pour the beaten eggs in.

  13. 13
    Step image

Tie it tightly with cotton thread at the appropriate length, and remember to leave extra space when tying to prevent it from breaking during boiling.

  14. 14
    Step image

Put the intestines in cold water, cook over medium-low heat, and do not cover the pot.

  15. 15
    Step image

When the intestines slowly turn yellow and set, poke holes in the intestines with a toothpick to release air—poke several more holes or they'll crack!

  16. 16
    Step image

After the main ingredient is fully ripe, it is taken out and rinsed in cold water, then sliced once cooled.

  17. 17
    Step image

Just mix in a little dipping sauce you like, and it becomes a delicious cold appetizer to go with drinks.
