Eggs Benedict
A brunch classic with toasted bread, sauteed asparagus, bacon and avocado topped by a softly poached egg, offering runny yolk and rich, savory layers.
Instructions
- 1

Put some butter in the pan and cook the asparagus and bacon until done, and fry the bread slices until the surface is crispy! Slice the avocado.
- 2

Put an appropriate amount of water, salt, and white vinegar (to help the egg coagulate) into a milk pot. After boiling, quickly stir with a spoon to create a vortex, and crack the egg into the center of the vortex.
- 3

After the surface of the egg white solidifies and turns white, turn off the heat, cover with a lid, and let it steam for 3 minutes. This way, the outside is solid, and the yolk inside is runny.
- 4

Scoop out the eggs and place them on kitchen paper to absorb the water, handling them gently.
- 5

How to make Hollandaise sauce: Melt the butter, beat the egg yolks in a bowl, then add the melted butter while stirring over a heat bath, stirring until thickened. Add lemon juice and a mixture of black pepper and salt, and mix well.
- 6

, I spread some cheese on the slices of bread again, laid on the avocado slices and bacon. Then I put the egg on top.
- 7

Simply pour the Hollandaise sauce over the surface of the Eggs Benedict!
- 8

Another glass of tomato juice.
