Instructions
- 1
Prepare the raw ingredients: eggs, tomatoes, scallions, noodles, garlic, and scallions.
- 2
Wash the tomatoes, drain the water, and cut them into small pieces.
- 3
Cut the sausage into slices of uniform size.

Pour base oil into the pot and heat it, place the mold, crack in the eggs, and fry over medium heat.
- 5
Fry the egg on both sides until golden brown and fully cooked.
- 6
Heat some base oil in another pan and add the garlic to sauté until fragrant.
- 7
Add the tomatoes and stir-fry quickly over high heat until the juice comes out. Add an appropriate amount of water and then add the seasonings: premium soy sauce, oyster sauce, aged vinegar, and sugar. Bring to a boil over high heat.
- 8
Pour the simmered sauce over the fried eggs.
- 9
Add the noodles in sequence and boil over high heat until the noodles are cooked through but not mushy.

When the sauce has reduced to not much, add salt and MSG to season evenly, and finally sprinkle chopped green onions to enhance the flavor before serving.
