Enoki Mushroom and Egg Boiled Rice Noodles
A soothing rice-noodle soup with tender enoki mushrooms, soft eggs and slippery noodles in a light, savory broth, ideal for quick comforting meals.
Instructions
- 1

Soak the rice noodles in advance to soften them, so they don't need to be cooked for too long. I used locally produced rice noodles, which are pretty good.
- 2

After cleaning the enoki mushrooms, cut them into sections, or you can leave them whole.
- 3

Boil the water, and in the meantime, put the enoki mushrooms in to cook as well. After all, enoki mushrooms aren't afraid of being cooked for a long time.
- 4

After the water boils, put the rice noodles in to cook. If the rice noodles have not been soaked, you can put them in before the water boils; unsoaked noodles are difficult to cook soft.
- 5

Cook the rice noodles until they are nearly soft, then beat in the eggs and add salt or a bit of light soy sauce.
- 6

Just cook the egg until it is done.
