Enoki Mushroom Tomato Tofu Soup

Enoki Mushroom Tomato Tofu Soup

A light, tangy soup of enoki mushrooms, tomatoes, and soft tofu cubes simmered together for a bright, umami-rich broth and comforting silky textures.

Instructions

  1. 1

Wash the tomatoes and enoki mushrooms thoroughly, and cut the tofu into pieces about 2 centimeters thick.

  2. 2

Cut the tomatoes into small pieces. If you want to remove the skin, you can make a cross-shaped incision at the top, then blanch in boiling water for 30 seconds to easily peel the skin. Trim off the tough bottoms of the enoki mushrooms and separate them into small bunches.

Pour an appropriate amount of water into a wok and bring it to a boil. Put the enoki mushrooms into the water and boil for 30 seconds until softened, then remove them. Enoki mushrooms contain colchicine, which can oxidize into a toxic form called dioxycolchicine when consumed, strongly irritating the gastrointestinal and respiratory mucous membranes. Consuming too much can cause symptoms such as dry throat and nausea. Although blanching will cause some loss of nutrients, health should be prioritized in the diet.

Use another pan, pour in a little oil, and stir-fry the tomatoes until they become thick; after being stir-fried, tomatoes can fully release lycopene, which is especially beneficial for men's prostate, and after stir-frying, the soup becomes thick and flavorful.

Pour an appropriate amount of hot water and bring it to a boil, then add the tofu pieces into the pot; tofu is rich in high-quality plant protein and also contains a large amount of calcium. It is called 'plant meat' and is an ingredient for many vegetarians to obtain abundant calcium. Elderly people often eat it to keep their legs and feet agile and to prevent osteoporosis, and children often eat it to help them grow taller.

Cover with the lid and simmer over low to medium heat for 5 minutes, no need to stir in the middle; I used the Anlon non-stick wok from Amazon, which only needs a little oil for stir-frying, and the lid seals very well, so the tomato tofu becomes rich and flavorful after 5 minutes of cooking.

  7. 7
    Step image

Sprinkle an appropriate amount of salt and mix evenly, then add the blanched enoki mushrooms into the soup, stir slightly and remove from heat, and sprinkle a little chopped green onion for color and aroma.
