A festive sticky rice pudding where glutinous rice cooked in coconut milk is molded over low-sugar red bean paste and studded with walnuts, raisins, cranberries, and red dates.
Instructions
- 1

Prepare the ingredients: 600g of white glutinous rice, 600ml of water, 200ml of coconut milk, 50g of coconut oil, 200g of low-sugar red bean paste, walnuts, raisins, dried cranberries, and red dates as needed.
- 2

Wash 600 grams of glutinous white rice and pour it into the electric pressure cooker.
- 3

Pour in 600 milliliters of water.
- 4

Pour in 200 milliliters of coconut milk.
- 5

Select the 'Cook Rice' function.
- 6

The glutinous rice will be cooked in about 25 minutes.
- 7

Pour 50 grams of coconut oil into the mixing bowl.
- 8

Pour in the freshly cooked glutinous rice.
- 9

Mix evenly while hot, then let it cool for later use.
- 10

Take a piece of plastic wrap and lay it inside the bowl, then first spread walnuts, red dates, raisins, and dried cranberries on the bottom.
- 11

Take some glutinous rice and cover it on top, pressing gently to fix it in place. This way, the dried fruits can be embedded in the glutinous rice.
- 12

Add 50 grams of low-sugar red bean paste.
- 13

After gently spreading it evenly, cover it with some glutinous rice on top, then shape and wrap it with plastic wrap.
- 14

Once prepared, it can be placed in the freezer. When ready to eat, steam it for about 10 minutes. The sticky and sweet Eight-Treasure Rice is a must-have on the New Year's Eve dinner table.
