Exclusive Alfalfa Vegetable Dumplings
Rustic vegetable dumplings where tender wild alfalfa shoots are wrapped in a soft cornmeal-and-wheat dough, fermented gently, then steamed for a wholesome, earthy spring flavor.
Instructions
- 1

Pick the more tender tips of the alfalfa.
- 2

Wash and drain the water.
- 3

Take an appropriate amount of cornmeal, add boiling water and stir into a dough, then let it cool for later use.
- 4

Chilled cornmeal is mixed with a small amount of white flour and yeast to form a dough. The purpose of adding white flour is to increase the viscosity and improve the texture.
- 5

The dough should be softer, so that adding wild vegetables will improve the texture.
- 6

Cover with plastic wrap and let it proof in a warm place for about forty minutes.
- 7

Add alfalfa sprouts and mix well. You can add a little salt at this step to enhance the flavor.
- 8

Take an appropriate amount of vegetable mixture and roll it into a ball, then poke a hole at the bottom to allow ventilation.
- 9

After the water boils, steam for twenty minutes.
- 10

Nutritious, healthy, and delicious alfalfa vegetable balls.
