Exclusive Braised Pig Trotters with Chinese Yam
Pork trotters are blanched and slow-simmered with ginger and cinnamon until gelatinous, then paired with Chinese yam for a rich, comforting tonic soup.
Instructions
- 1

Chop the pig trotters into pieces and soak for a while, changing the water twice.
- 2

Refill the pot with fresh water, add a bottle cap of cooking wine, and turn on the heat to prepare for blanching.
- 3

Bring to a boil over high heat and keep it boiling for two minutes.
- 4

After blanching, pour out the blood water and wash the pig's trotters clean. Smash the ginger, cut it into large pieces, and use a small piece of cinnamon.
- 5

Add fresh water again and put in the ingredients.
- 6

Bring to a boil over high heat.
- 7

Reduce to low heat and simmer for about fifty minutes.
- 8

Peel the yam and cut it, then soak it in clean water.
- 9

After the pig trotters are stewed, add the Chinese yam, add salt, and continue stewing for eight minutes until the yam is soft and tender.
- 10

Take it off the stove, and you can make a dipping sauce to go with the pig trotters.
- 11

The broth is delicious and not greasy.
