Exclusive Braised Pig Trotters with Soybeans and Peanuts
Pig trotters are singed, blanched, then braised with soybeans and peanuts until the collagen-rich sauce turns glossy and the meat fork-tender and sticky.
Instructions
- 1

Go to the market to buy fresh pig trotters and ask the seller to cut them into larger pieces. Blanch the skin of the pig trotters. This will make the texture richer later. Then put them into a pot of cold water. Add a little cooking wine. After the water boils, cook for five minutes and remove to drain the blood.
- 2

Add a little bit of oil to the pot. We sauté the star anise and ginger slices until fragrant.
- 3

Pour in the pig trotters and stir-fry evenly for five minutes.
- 4

We need to soak these soybeans in clean water for two hours in advance.
- 5

We transfer the pig trotters into the clay pot, pour in enough water to cover the pig trotters, and bring it to a boil over high heat.
- 6

Boil and pour in the washed soybeans and peanuts. Turn to low heat and simmer, now everyone can go do whatever they need to do.
- 7

Cover and cook for two hours.
- 8

Sprinkle with green onion leaves before taking it off the heat. Add an appropriate amount of salt. A particularly simple winter warming soup is ready.
