Exclusive Braised Rice with Salted Pork and Taro
A savory claypot-style rice cooked with salted pork, taro, shiitake, and carrot, the vegetables sauteed and steamed over rice for a rich, earthy, comforting dish.
Instructions
- 1

After cleaning the dried shiitake mushrooms, soak them in water until they soften, then take them out and cut into small cubes. Keep the soaking water to cook rice.
- 2

Cut taro, carrots, and sweet peas into small cubes.
- 3

Cut the salted meat into strips.
- 4

Add a little oil to the pan, then add the salted meat and sauté over low heat until the oil is released.
- 5

Add dried shiitake mushrooms, carrots, and taro and stir-fry, then add salt, cooking wine, and light soy sauce and stir-fry until fragrant.
- 6

Put the rice in the rice cooker and rinse it twice.
- 7

Spread the stir-fried diced vegetables over the rice, pour in the water used to soak the shiitake mushrooms, and add more water as needed, with the total amount of water similar to what you normally use for cooking rice.
- 8

When the water in the rice cooker is burned dry, add the sweet peas and continue to simmer.
- 9

Mix the braised rice evenly.
