Exclusive Coconut Rice Balls
Playful sticky rice balls studded with goji berries, cranberries, and raisins, sweetened with sugar and rolled in shredded coconut for a chewy, colorful, kid-pleasing snack.
Instructions
- 1

First, steam the glutinous rice until cooked, or you can directly reheat leftover rice. If steaming is needed, the ratio of glutinous rice to regular rice is 2:1. To make the color of the rice more vibrant, you can add purple sweet potato or pumpkin while steaming the rice, which will make the color more beautiful.
- 2

Steamed rice, add sugar, goji berries, cranberries, or raisins. In short, any dried fruit you have at home can be added, or crushed red dates are also fine.
- 3

Then shape the rice into a round ball, and roll it in a layer of shredded coconut.

And it's done! You can shape it however you like. I used rice steamed with pumpkin, and if you use purple sweet potato, the color will be even more beautiful.
