Exclusive Cold Dressed Chives
Chive stems and leaves are blanched separately for perfect texture, joined by wood ears and white beech mushrooms in a chili-flecked, sesame-scented dressing.
Instructions
- 1

Ingredients needed: chives, wood ear mushrooms, shimeji mushrooms, small chili peppers, white sesame seeds.
- 2

Wash the chives and cut them into sections, separating the stems and leaves.
- 3

Put in the stems first when the water boils, blanch for half a minute, then add the leaves, and blanch for another half a minute. Remove and quickly plunge into cold water.
- 4

Cut the wood ear mushrooms into small pieces, but not too small.
- 5

Remove the roots from the white beech mushrooms and wash them clean.
- 6

Blanch in boiling water for 2-3 minutes, then quickly remove and plunge into cold water.
- 7

Squeeze out the water and put them together.
- 8

In another bowl, add the chopped bird's eye chili and sesame seeds, pour in hot oil, then add steamed fish soy sauce and oyster sauce and mix well.
- 9

Just add it to the vegetables and mix evenly.
