Exclusive Cornmeal and Red Date Steamed Cake
A rustic steamed cake of cornmeal and flour sweetened with red dates, its batter raised by yeast and steamed into a moist, springy, lightly sweet slab.
Instructions
- 1

Prepare the ingredients: 1 cup of cornmeal (using the measuring cup that comes with the rice cooker), 2 cups of flour, 80 grams of red dates, 30 grams of sugar, and 3 grams of yeast powder.
- 2

Place the cornmeal in a bowl, add about 150 grams of boiling water, and stir into a dough. Set it aside to cool.
- 3

When airing the corn dumplings, wash the red dates, dry them, remove the pits, and cut them into small pieces.
- 4

When the corn mixture has cooled to a slightly warm temperature, add the flour and yeast powder.
- 5

Add an appropriate amount of warm water to disperse, then add the chopped red date pieces.
- 6

Knead into a relatively smooth dough (because of the cornmeal, it won’t be too smooth)
- 7

Place the steaming rack liner in the steamer, put the kneaded dough directly on the liner, press it flat with your hands, and let it ferment in a warm place.
- 8

Ferment for about 1 hour, until the surface of the dough is obviously fluffy, then place it in a steamer and steam on high heat for 25 minutes.
- 9

After steaming, take it out and let it cool slightly before unmolding.
- 10

After cooling, cut into pieces; they are soft, warm, and sweet.
