Exclusive Cornmeal Steamed Cake
A fluffy steamed cornmeal cake where boiling water scalds the cornmeal for a finer crumb, then the batter with egg and yeast rises tall and steams into a soft, mildly sweet sponge.
Instructions
- 1

Add 100 grams of cornmeal to a glass bowl and pour in an equal amount of boiling water. After scalding the cornmeal, its texture becomes delicate and it won't scratch your throat.
- 2

Stir with chopsticks until it becomes fluffy.
- 3

After the fluffy cornmeal has cooled, pour in the white flour.
- 4

Crack in one egg.
- 5

Add 3 grams of yeast.
- 6

Knead the dough with 500 grams of warm water.
- 7

After stirring with chopsticks until it becomes flaky, knead it on the kneading mat into a smooth dough.
- 8

Place the dough on the steamer tray without proofing, flatten it, cover it, and let it rest for half an hour.
- 9

Let it rise until it doubles in size.
- 10

Bring to a boil with high heat and steam for 10 minutes, then simmer for 2 minutes before serving.
