Exclusive Dried Bayberry
Chewy dried bayberries simmered for hours with rock sugar and a squeeze of lemon juice, concentrating their tart juice into glossy, ruby-hued fruit with an intense sweet-tangy flavor.
Instructions
- 1

First, select the bayberries, then wash them. Soak them in salt water for ten minutes first, and then rinse them.
- 2

Put the bayberries into a pot, add clean water and salt, bring to a boil for two minutes, then pour out the salt water. Add clean water and cook again. The water should not cover the bayberries; the bayberries will release water, and too much water makes it difficult to cook.
- 3

Pour water and rock sugar into the pot, cook over medium heat, and it will take about two hours. When the water is almost boiled down, squeeze lemon juice into the pot.
- 4

Cook over low heat, stirring to mix evenly, and avoid burning the pot.
- 5

Put it in the air fryer and bake at 120 degrees for 2 hours.
- 6

Mix with sugar after taking it off the heat.
- 7

Upside down and evenly.
