Exclusive Egg and Milk Pancakes
Soft mini griddle cakes enriched with egg, milk, and butter in a lightly yeasted dough, rolled, cut into rounds, and pan-fried until golden outside yet tender and milky inside.
Instructions
- 1

Place a large bowl, add flour, eggs, milk, flour, and dry yeast, and mix evenly by hand.
- 2

Add unsalted butter, then mix evenly with the dough.
- 3

Knead the dough into a ball, place it on the workbench, and let it rest for 20 minutes.
- 4

Because the cutting board is not big enough, divide the dough into two parts, roll them into balls, then press them into dough discs about 5 millimeters thick.
- 5

Use a mold or cup to press the dough into round pieces, gather the remaining scraps into a ball, then roll it into a large piece, and press it into dough again.
- 6

Place the dough in the electric griddle and cover it with the lid.
- 7

Set the pan cake mode, medium heat on both sides, high heat for 3 minutes. Lift the lid to check the situation. If one side has turned golden brown, flip it. If the other side has also reached the desired color, take it out. If the color is not enough, bake for another 2 minutes. Some dough pieces vary in thickness; if the top does not brown, flip it and continue baking for 2 more minutes, then check again until it is browned.
