Exclusive Fried Lai Fun
A Cantonese-style stir-fry of springy lai fun rice noodles tossed with marinated pork, garlic, chives, and bean sprouts; blanching the noodles first keeps every strand distinct, glossy, and bouncy.
Instructions
- 1

Preparation: rice vermicelli.
- 2

Chives.
- 3

Mung bean sprouts.
- 4

Marinated meat slices, minced garlic.
- 5

First, handle the rice noodles by pouring boiling water over them. The main goal is to separate the noodles, as the rice noodles are already cooked.
- 6

Then drain the water.
- 7

Add some soy sauce and oil.
- 8

Mix evenly, so when you stir-fry it later, it will be fresh, separated, and won’t stick together.
- 9

Heat the pan and add oil, then sauté the minced garlic until fragrant.
- 10

Add the slices of meat and stir-fry until fragrant, then scoop them out and set aside.
- 11

There is still some oil in the pot, add the chives and mung bean sprouts, and stir-fry on high heat.
- 12

After it stops cooking, add a little salt and mix well.
- 13

Add the vermicelli again.
- 14

Sliced meat twice-cooked.
- 15

Stir-fry quickly for about one minute.
