Exclusive Garlic Chicken Drumsticks
Poached chicken drumsticks are cooled, hand-torn and drenched in a fragrant sauce heavy on raw garlic, brightened with black vinegar, sugar and a splash of broth.
Instructions
- 1

Place the chicken leg meat in cold water and blanch for 3 minutes, then rinse off the foam with warm water.
- 2

Add cooking wine, ginger slices, shallots, and a tied-up green onion. Bring to a boil over high heat, then simmer over low heat for 10 minutes, and braise for another 5 minutes.
- 3

Scoop out the cooled boiled water and set it aside.
- 4

Crush the garlic and mince it, finely chop the scallions and dried chili peppers (use more garlic than the others).
- 5

Add oyster sauce, steamed fish soy sauce, white sugar, aged vinegar, and two tablespoons of chicken broth to make the seasoning sauce.
- 6

Tear the cooled chicken drumsticks into small pieces.
- 7

Mix it into the marinade, and refrigerate for a while to let the flavors soak in better.
- 8

High in protein, low in fat, the top choice for summer.
