Exclusive Garlic Paste Pork
Pork belly simmers with whole spices until chopstick-tender, cools naturally and is sliced paper-thin, ready to meet the classic garlicky, chili-scented sauce.
Instructions
- 1

Wash the pork belly, put it in a pot with cold water, add a little cooking wine, boil for three minutes, then take it out and rinse off the foam.
- 2

Start another pot and add an appropriate amount of water, then add pork belly, green onions, ginger, Sichuan peppercorns, star anise, cinnamon, and bay leaves.
- 3

Add a little cooking wine.
- 4

Bring the water to a boil, then reduce to low heat and cook for about 30–40 minutes.
- 5

The chopsticks should be able to pierce through easily.
- 6

Scoop out and let it cool naturally.
- 7

Slice thinly and arrange on a plate, then sprinkle with minced garlic.
- 8

Top with chopped green and red peppers and cilantro (if you like it spicy, add chopped Thai chili).
- 9

Three tablespoons of light salt soy sauce.
- 10

A little sesame oil.
- 11

Done.
