Exclusive Golden Egg Fried Rice
Golden fried rice where each grain is coated with egg yolk, wok-tossed with ham and green pepper for a fragrant, fluffy, restaurant-style result.
Instructions
- 1

Prepare the ingredients.
- 2

Cut the ham sausage and green pepper into small dice. Beat 3 eggs and 1 egg yolk into the rice, and beat 2 eggs and 1 egg white into another empty bowl. You can use 3 eggs or 2 eggs, depending on your taste preference. However, for the amount added to the rice, only 1 egg yolk is needed; adding more will actually have a negative effect.
- 3

Beat the eggs, mix the rice and egg yolk evenly, stirring thoroughly so that every grain of rice is coated with the egg yolk.
- 4

Heat oil in the pan to grease it.
- 5

When the oil is slightly hot, pour in the beaten eggs and cook over medium-low heat.
- 6

Stir-fry until cooked and broken into pieces.
- 7

Transfer the scrambled eggs into a bowl.
- 8

Heat the pan again with a little oil, just enough to coat the pan, then add the green peppers and diced ham, and stir-fry until the green peppers are just tender.
- 9

Pour the egg yolk over the rice and stir.
- 10

Stir-fry over medium to low heat.
- 11

Keep stir-frying continuously for about three to five minutes. Do not use high heat, and slowly cook the rice until done.
- 12

Pour in the scrambled eggs.
- 13

Continue stir-frying, break the scrambled eggs a bit more, and sprinkle half a teaspoon of salt for seasoning before taking it out of the pan.
- 14

The rice is golden yellow, with each grain distinct.
