Exclusive Gray Alkaline Red Bean Paste Zongzi
Ash-lye glutinous rice wrapped with sweet red bean paste and boiled until translucent amber, giving bouncy, golden zongzi with a tender molten-sweet filling inside.
Instructions
- 1

Rinse the glutinous rice several times, then add water that covers the rice and lye water, and soak for an hour.
- 2

Soak the red beans overnight in advance, put them in a pot and cook until soft, then crush them with a rolling pin.
- 3

Add an appropriate amount of cooking oil, sugar, and a small amount of salt, and stir-fry.
- 4

Stir-fry continuously to avoid burning the pot.
- 5

Stir-fry until it can clump together.
- 6

After cooling until it's not hot to the touch, roll it into small balls and set aside.
- 7

Take two clean, washed bamboo leaves, shape them into a funnel, and add half of the glutinous rice.
- 8

Put in the red bean paste filling.
- 9

Add an appropriate amount of glutinous rice.
- 10

Fold the leaf over to seal it.
- 11

Bundling completed.
- 12

Put it into the pressure cooker and add enough water.
- 13

After bringing it to a boil, turn to low heat and simmer for three hours. After turning off the heat, continue to let it sit for a while. It can be eaten once opened.
