Exclusive Gudat Soup
A comforting northern Chinese dough-drop soup with tender torn flour pearls, tomato, cabbage, vermicelli, and scrambled egg, thickened naturally for a hearty, velvety-savory bite.
Instructions
- 1

Cut the Chinese cabbage into small sections, beat the eggs in a bowl until scrambled, chop the green onions, mince the ginger, peel and dice the tomatoes, break the vermicelli into small sections, wash and soak them in water for a while, and cut the cilantro into small pieces.
- 2

Take a slightly larger bowl and put half a bowl of dry flour in it.
- 3

Turn the faucet to a relatively fast dripping state, then quickly stir with chopsticks. Wherever there is dry flour, drip water there. This way, the lumps made will be more even. Keep stirring until there is no dry flour left.
- 4

Like this, the lumps are mixed.
- 5

Add oil to the pot and sauté the green onions and ginger until fragrant
- 6

Add the cabbage and stir-fry
- 7

Stir-fry the cabbage until soft, add oyster sauce, and season with light soy sauce for color.
- 8

Then add the diced tomatoes and continue stir-frying
- 9

After stir-frying the tomatoes until they release their juice, add water, making sure to use a bit more, then add the soaked vermicelli.
- 10

Bring the broth to a boil, cook the vermicelli until soft, then add the dumplings. After adding the dumplings, quickly stir with a spoon to prevent them from sticking together.
- 11

Cook the lumps through, then pour in the beaten eggs
- 12

Add cilantro at the end before serving
- 13

The bowl of fragrant dumpling soup is ready. Drink it while it's hot, it's warm and comforting.
