Exclusive Horse Hoof Red Date and White Fungus Soup
A soft, gel-like sweet soup of fresh snow fungus, water chestnut and diced red dates, simmered until the broth turns thick and silky.
Instructions
- 1

Place the fresh white fungus into a bowl and add clean water. I am using fresh white fungus, which does not need to be soaked, making it easier to cook thoroughly and release its gel, with a softer and more glutinous texture. Dried white fungus needs to be soaked for 1-2 hours in advance.
- 2

Wash it thoroughly by hand. Tear the silver ear into small pieces. Do not use a knife to cut it; tearing by hand makes it easier to cook into a soft and glutinous texture.
- 3

Remove the pits from the washed jujubes, then continue to cut them into small cubes.
- 4

Add an appropriate amount of water to the pot, put the small pieces of silver fungus into the pot, and add the diced water chestnuts.
- 5

After the mixture comes to a boil, reduce to low heat and simmer. Remember to stir slightly with a spoon to prevent overflow and burning! Cook until the soup becomes thick, then add the red dates and stir evenly. It is essential to cook over low heat the entire time. This way, the prepared white fungus soup will be fragrant, sweet, soft, and thick with gelatinous texture.
- 6

Simmer over low heat for about 20-25 minutes until the soup thickens and the white fungus breaks down and becomes gelatinous. Add rock sugar and stir until dissolved.

Not only is it especially healthy for the baby to drink, I also have a bowl myself, which beautifies and nourishes the skin, making me feel moisturized all over. On a warm afternoon, having a bowl together with the baby is so delightful and super happy~
