Exclusive Jade Mustard Green and Fresh Meat Dumplings
Jade-green boiled dumplings with wrappers tinted by pureed shepherd's purse, hiding a juicy pork and chopped wild-green filling that tastes fresh, grassy, and savory.
Instructions
- 1

Clean the shepherd's purse thoroughly.
- 2

Blanch in boiling water, remove and cool, then squeeze out the water from part of it and chop finely.
- 3

Put part of it in the blender with an appropriate amount of water and blend into a puree.
- 4

Make dough with shepherd's purse puree.
- 5

Knead into a smooth, slightly soft dough, cover with a damp cloth, and let it rest for half an hour.
- 6

Finely chop the pork with the fat in the middle.
- 7

Add salt, cooking wine, light soy sauce, and oyster sauce, and mix well.
- 8

Finely chop the scallions.
- 9

Mix minced meat, shepherd's purse, and green onions to make the filling (shepherd's purse absorbs oil, so if there is a lot of lean meat, you can add a little oil accordingly).
- 10

Roll the well-fermented dough into long strips and cut them into small pieces.
- 11

Flatten it and roll it into dumpling wrappers.
- 12

Take an appropriate amount of filling and wrap it into dumplings.
