Exclusive Jianbing Guozi
Tianjin's beloved street crepe: a lacy mung-bean batter griddled with egg, scallions, pickled mustard and sesame, wrapped around crisp fillings for contrast of soft and crunchy.
Instructions
- 1

Mix the flour, mung bean flour, and water, and stir evenly until there are no lumps, then let it rest for about 10 minutes.
- 2

Wash the lettuce and drain the water.
- 3

Slice the luncheon meat and fry it briefly.
- 4

Prepare the ingredients.
- 5

Brush oil on the frying pan, pour in an appropriate amount of batter, and spread it evenly with a pancake spatula.
- 6

Break an egg and spread it evenly.
- 7

Before the egg mixture solidifies, sprinkle in chopped green onions, minced pickled mustard, and toasted black sesame seeds.
- 8

After the egg mixture has fully set, flip it over and brush on an appropriate amount of spicy sauce.
- 9

Add lettuce, potato chips, and luncheon meat. (I used some potato chips because I didn't have crispy crackers, but as it turns out, potato chips lose their crispiness when heated.)
- 10

Cut in the middle, then fold in half.
- 11

Making breakfast can also be done very quickly.
