Exclusive Korean Bean Sprout Cold Soup
A chilled Korean-style soup built on soybean sprouts simmered with chili and scallion, seasoned with fish sauce, beef powder, and sesame for cooling summer refreshment.
Instructions
- 1

Main ingredients needed: soybean sprouts, Thai chili, green chili, scallions, sesame seeds, seafood soy sauce, beef powder, fish sauce, garlic.
- 2

Remove the roots from the soybean sprouts and wash them clean.
- 3

Bring water to a boil, add a Thai chili and a bunch of green onions, and cook for three minutes.
- 4

Add the bean sprouts, cover, and cook for another three minutes. Taste to see if the tips of the bean sprouts are cooked.
- 5

Remove the green onions and Thai chilies and discard them.
- 6

Quickly scoop out the bean sprouts and plunge them into cold water. Soaking in ice water is best.
- 7

Let the soup of boiled bean sprouts cool for a while before seasoning, and add an appropriate amount of salt.
- 8

Add half a spoon of beef powder.
- 9

Add a little seafood soy sauce, not too much.
- 10

Add an appropriate amount of fish sauce.
- 11

Allow to cool naturally until completely cooled.
- 12

After the bean sprouts have completely cooled, squeeze out the water.
- 13

Add shredded carrots, chopped green onions, sliced garlic, Thai chili pieces, and green pepper pieces.
- 14

Add white sesame seeds.
- 15

Add the cooled soup in which the bean sprouts were cooked.
- 16

Place in a sealed container and refrigerate for half a day.
- 17

Done! It tastes even better with some ice cubes in it.
