Exclusive Lamb and Yellow Radish Dumplings
Northern-style boiled dumplings pairing blanched, chopped yellow radish with ginger-scented lamb filling whipped with broth until juicy, delivering sweet-radish snap against rich, peppery meat.
Instructions
- 1
Cut the yellow radish into thin strips, put them into a pot of boiling water, blanch for about 10 minutes, take them out and squeeze out the water, then chop them finely and set aside for later use.
- 2
Slice the mutton and chop an appropriate amount of green onions and ginger.
- 3
Place the chopped lamb mince into a bowl, add 13g of salt, 3g of MSG, 8g of light soy sauce, 5g of dark soy sauce, 3g of pepper, 3g of Sichuan pepper powder, and 200g of cooled boiled water. Stir quickly in one direction until the mixture becomes elastic.
- 4
Add another egg and mix evenly.
- 5
Mix the chopped yellow radish with cooked oil, and then combine it into the meat filling.
- 6
Just stir until evenly mixed.
- 7
The dough for making dumplings should be soft, fully rested and kneaded, and shaped into the form you like.
- 8
You need plenty of water to boil dumplings, so that the cooked dumplings are fresh, translucent, and elastic.
