Exclusive Lotus Root and Pork Spine Soup
Pork spine is soaked, blanched, and simmered an hour before lotus root goes in, cooking until starchy-soft in a clean, robustly savory broth.
Instructions
- 1

Soak the spine for a while, changing the water several times in between.
- 2

After soaking the spine, start another pot of cold water to prepare for blanching.
- 3

Bring to a full boil, skim off the foam.
- 4

Pour out the blood water, start a new pot of water, and add smashed pieces of ginger.
- 5

After simmering the bones for an hour, add the lotus root.
- 6

Continue simmering for twenty minutes until the lotus root is tender, then turn off the heat and add salt and chicken essence to season.
- 7

Very delicious.
