Exclusive Mixed Flour and Red Date Steamed Cake
Rustic multi-grain steamed cake combining scalded bean, corn, and millet flours with wheat flour, fermented with sweet rice wine and studded with red dates for a moist, wholesome crumb.
Instructions
- 1

Put the soybean flour and cornmeal in a bowl.
- 2

Mix the two types of flour evenly, then slowly pour in boiling water to scald the flour.
- 3

Stir until there is no dry powder, then let it cool for later use.
- 4

After cooling, add millet flour, all-purpose flour, yeast, and rice wine. Rice wine can enhance the fragrant and sweet flavor of the steamed cake; if unavailable, it can be replaced with an equal amount of water. If you like it sweet, you can add a suitable amount of sugar at this step.
- 5

Add about 80ml more water. The resulting dough should be relatively sticky to the touch, not too wet or too dry.
- 6

Cover the kneaded dough with plastic wrap and let it rest and rise.
- 7

About an hour later, the well-rested dough had obviously increased in size.
- 8

Apply oil in the mold.
- 9

Pour the dough into the mold and smooth it out.
- 10

Simply place a few red dates on the surface, and it can be steamed in the pot.
- 11

Put cold water in the pot, steam for 30 minutes after the water boils, turn off the heat and let it sit for two minutes before serving.
- 12

Demold when slightly cooled.
- 13

Mixing coarse and fine, nutritious and healthy.
