Exclusive Pan-Fried Pancake with Mustard Greens and Minced Meat
Savory pan-fried pancakes of yeasted batter crowned with a juicy filling of minced pork, blanched mustard greens, and tofu, fried until lacy-crisp beneath and pillowy on top.
Instructions
- 1

Finely chop the pork belly, add salt, cooking wine, light soy sauce, and oyster sauce, and mix everything in the same direction until well combined.
- 2

Wash the fragrant mustard greens clean, blanch them in boiling water until soft, then remove and cool them.
- 3

Cut finely and squeeze out the moisture.
- 4

Cut the old tofu into small pieces.
- 5

Finely chop the scallions.
- 6

Put all the ingredients together, add mashed garlic and oil, and mix well to make the filling.
- 7

Mix 200g of flour, 2g of yeast, and 170g of water into a thick batter, cover with plastic wrap, and let it ferment.
- 8

Stir the fermented batter with chopsticks. It has a lot of moisture and is very sticky, so you need to coat your hands with dry flour when handling it. Take a small portion of the batter and roll it into a ball in your hands, then flatten it.
- 9

Place the mustard greens and meat filling on top.
- 10

Keep your mouth shut.
- 11

Brush oil on the frying pan and place the pies in to fry.
- 12

Flip and fry again.
- 13

Add an appropriate amount of water, cover, and simmer.
- 14

The moisture has evaporated.
- 15

The oil-fried pancake filling is fragrant and the skin is soft, very delicious.
