Exclusive Pickled Mustard Egg Custard
A silky steamed egg custard whisked with warm water and topped with savory pickled mustard tuber, gently steamed under a cover so the surface stays smooth and bubble-free.
Instructions
- 1

2 free-range eggs.
- 2

Add a little bit of salt (there will be pickled mustard later), and mix it with warm water.
- 3

Put cold water on the pot and cover with plastic wrap. (I didn't have plastic wrap at home, so I used a plastic bag instead. At 9 minutes into steaming, it suddenly stuck to the surface of the custard, so I removed it 😅) Steam over medium-low heat for twenty-five minutes. Towards the end of steaming, open the lid every two to three minutes and then cover it again, so the custard doesn't form bubbles.
- 4

If you poke it with a chopstick and there is no egg liquid, it's cooked.
- 5

Add an appropriate amount of pickled mustard tuber, green garlic leaves, sesame oil, and light soy sauce.
