Exclusive pigeon gizzard mixed with cucumber
Scored cucumber is smashed and cut into sections, then studded with stewed pigeon gizzards whose springy chew plays against the cool, crisp vegetable.
Instructions

Wash the cucumber and scratch the skin in a crisscross pattern.

Pat it, then cut into pieces.

Stewed pigeon gizzards.

Take out the pigeon gizzards and put them in the cucumber, then sprinkle with salt.

Finished product.
