Exclusive Polish-style Low-Sugar Plain Toast
Exclusive Polish-style Low-Sugar Plain Toast made with high-gluten flour, water and yeast, baked until golden and fragrant. Easy to follow with simple step-by-step instructions.
Instructions
- 1

Stir the poolish ingredients evenly with chopsticks, cover with plastic wrap, and ferment in a warm and humid place until it is 2-3 times larger.
- 2

A well-fermented Polish starter has a slight sour aroma, and when lifted with chopsticks, it shows dense holes and long, stretchy strands.
- 3

Put all ingredients except butter and the Polish starter dough into the bread machine pan (since the flour's water absorption varies, you can reserve about 20 grams of liquid), start a kneading program for 20 minutes, and the dough should be able to stretch into a rough film.
- 4

Add the butter, then start another kneading program, and you can pull out a strong and thin glove-like membrane; this dough is very soft.
- 5

Take out the dough, shape it into a round, place it in a bowl, cover with plastic wrap, and let it ferment at room temperature. Adjust the time according to the condition of the dough. The fermented dough should be 2 to 2.5 times its original size.
- 6

Pour the risen dough onto the workbench, gently pat to release air, divide evenly into 6 portions, shape each into a round, cover with plastic wrap, and let rest for 10 minutes.
- 7

Take a piece of dough and roll it into the shape of a cow tongue.
- 8

Roll up.
- 9

After everything is done, cover with plastic wrap and let it rest for 10 minutes.
- 10

Roll the relaxed dough again into about 40 centimeters long, then flip it over with the smooth side facing down.
- 11

Roll into a roll.
- 12

Place the rolled dough pieces in a 450g loaf pan in order, and let them undergo the second fermentation in a warm and humid place.
- 13

Let the dough rise until it is 90% full.
- 14

Brush the surface with egg wash and preheat the oven to 180 degrees.
- 15

Place the raw toast dough into the lower rack of the preheated oven. Bake with both top and bottom heat at 175°C for 35 minutes. Adjust the temperature and time according to your own oven's actual situation, and cover with aluminum foil in time during baking if necessary.
- 16

Place the baked toast on its side to cool after removing it from the mold.
- 17

This toast is super soft, and the stretching effect is also pretty good.
