Exclusive Pork Bone Double Mushroom Tofu Soup
A layered pork bone broth built with shiitake mushrooms, pitted red dates, and dried shrimp, then enriched with soft tofu cubes for deep umami, sweetness, and gentle richness.
Instructions
- 1

Put cold water and pork bones into the pot, turn to high heat, and after the water boils briefly, take out the bones and rinse off the scum with hot water;
- 2

Remove the pits from the red dates and place them in a large iron pot. Fill with water up to one-third full, add one dried shiitake mushroom, one red date, and five dried shrimp into the pot, and cook over high heat until the ingredients become soft.
- 3

Scoop up the ingredients, slice the shiitake mushrooms, crush the dried shrimp, add them to the soup, and cook again;
- 4

Cut the tofu into pieces and add it to the soup. Bring the soup to a boil over high heat, then reduce to medium-low heat and simmer for about 30 minutes.
- 5

Add the winter melon and simmer until it becomes translucent and fully cooked. Add a little salt when drinking the soup.
