Exclusive Rolled Noodles
A Guangxi-style rice noodle roll, steamed thin from rice batter and wrapped around a chunky filling of minced pork, wood ear, carrot, and sweet potato for a silky-yet-crunchy bite.
Instructions
- 1

Soak the dried wood ear mushrooms; peel and dice the sweet potatoes and carrots, and since the meat grinder breaks them up, cut them yourself.
- 2

After blanching the wood ear mushrooms, put them in a meat grinder (grind two to three times, so it has a grainy texture when eaten).
- 3

Blanching carrots and sweet potatoes (forgot to take a photo of the sweet potatoes).
- 4

Put the lean meat through a meat grinder and set aside, squeeze the water out of the carrots and sweet potatoes, chop the green onions, and prepare the wood ear mushrooms.
- 5

Heat the pan and add peanut oil.
- 6

Add the meat and stir-fry until cooked.
- 7

Add diced carrot, sweet potato, and wood ear mushrooms.
- 8

Add scallions.
- 9

Add salt, soy sauce, and oyster sauce and stir-fry evenly.
