Exclusive Scalded Dough Vegetable and Egg Box
Hot-water dough pockets pan-fried until speckled brown and chewy, filled with chopped greens, scrambled egg, and dried shrimp for a savory vegetable turnover.
Instructions
- 1

Mix the flour and salt, scald the dough with hot water at about 80°C, and after it cools slightly, knead into a smooth, slightly soft dough. Cover with a damp cloth and let it rest for more than half an hour.
- 2

Wash the vegetables clean, blanch them in boiling water until soft, then remove and cool.
- 3

Squeeze out the water and chop finely.
- 4

Crack the eggs into a bowl, add salt, cooking wine, and a little water, and beat them until mixed.
- 5

Put oil in the pan, add the beaten eggs, and use chopsticks to stir and break them apart.
- 6

Add the green vegetables and dried shrimp.
- 7

Add salt and oyster sauce and mix well.
- 8

Divide the well-fermented dough into small portions (this is one part).
- 9

Roll it into a round piece.
- 10

Put in the filling.
- 11

Make it into a box.
- 12

Brush oil on the frying pan and put the box in to fry.
- 13

Flip it and fry again, turning each side twice until cooked.
- 14

A very delicious box, well-received by the family.
