Exclusive Sea Shrimp, Seaweed, and Egg Drop Soup
A quick, savory soup of rehydrated dried shrimp, nori-like seaweed, and wisps of egg in a light broth, finished with scallions for an umami lift.
Instructions
- 1

Prepare the materials.
- 2

Soak dried small shrimp in warm water.
- 3

Beat the eggs and add a little salt, then mix evenly.
- 4

Chop the green onions and set aside.
- 5

Heat the pan before adding cold oil, then add half of the chopped green onions and stir-fry until fragrant.
- 6

Add the soaked dried shrimp to the pan after draining the water, stir-fry briefly, and add a few drops of cooking wine to remove the fishy smell. Then add an appropriate amount of water and bring it to a boil over high heat.
- 7

Tear the seaweed into small pieces by hand and put them into the water.
- 8

Pour in the egg flowers, bring to a boil again, add an appropriate amount of salt to taste, drizzle with sesame oil, and it's ready to serve.
- 9

Sprinkle some scallions on the table.
