Exclusive Shiitake Mushroom and Mustard Greens Bun
Steamed buns stuffed with blanched mustard greens, diced shiitake, and dried shrimp, seasoned with sesame oil for a savory vegetable filling.
Instructions
- 1

Mix the flour and yeast, add water and knead into a smooth dough, wrap it with plastic wrap and let it ferment in a warm place.
- 2

Wash the mustard greens and blanch them in boiling water, then take them out and rinse with cold water.
- 3

Squeeze out the water and chop finely.
- 4

Soak the dried shiitake mushrooms until soft and then cut them into small dice.
- 5

Rinse the dried shrimp with clean water once.
- 6

Finely chop the scallions.
- 7

Place the ingredients in a deep bowl, add salt, oyster sauce, and sesame oil, and mix well.
- 8

Take the fermented dough out and place it on the countertop to knead and release the air, then divide it into small portions.
- 9

Roll it into a round piece.
- 10

Wrap the mustard greens and mushroom filling into willow leaf-shaped buns.
- 11

Place it on an oiled steaming rack for a second proofing. When it has noticeably expanded and lightened, steam it over cold water. Once the water boils and produces steam, switch to medium heat and steam for 15 minutes, then turn off the heat and let it steam with the lid on for 5 more minutes before opening the lid.

Vegetable-filled buns are also very delicious.
