Quail eggs are boiled, peeled and steeped in savory brine, then smoked over tea leaves and sugar until a golden, lightly charred fragrance settles in.

Required ingredients: quail eggs, tea leaves, sugar, braising liquid.

  2. 2

Put quail eggs into a pot with cold water, and boil for 5-7 minutes after the water comes to a boil. Turn off the heat and cover the pot to let it sit for five minutes.

Peel. (The peeling method is in the minced meat and quail egg recipe).

  4. 4
    Step image

Take a container and pour 100ml of brine into it.

  5. 5

Add 250–300ml of water (adjust according to your own taste).

    Add the quail eggs.

  7. 7
    Step image

Seal it with plastic wrap and put it in the refrigerator to chill overnight.

  8. 8
    Step image

Take out the marinated quail eggs. If you don't like the smoky flavor, you can eat them directly.

  9. 9
    Step image

Take an old pot that is about to be discarded, and line the bottom with aluminum foil. Put rice and sugar inside. I had some tea at home that no one was drinking, so I used the tea.

  10. 10
    Step image

Place the quail eggs on the steaming mat and cover with the lid.

  11. 11
    Step image

Turn the range hood to the highest setting, turn the heat to high, when smoke starts to appear inside, switch to the lowest heat, and continue until there is less smoke inside and you can see the contents, then turn off the heat.

  12. 12
    Step image

It's smoked properly. Using the same method, you can smoke anything.

  13. 13
    Step image

You can add some colorful vegetables or fruits for decoration, and it's done.
