Exclusive Sour and Fresh-Tasting Vermicelli
Glass noodles and carrot shreds are parboiled, cooled, and bathed in a vibrant sweet-sour dressing of glutinous rice vinegar, chili oil, and sesame, garnished prettily with cucumber.
Instructions
- 1

Peel the carrots and wash the cucumbers thoroughly for later use.
- 2

Cut the carrot into thin strips, slice half of the cucumber into strips, and cut the remaining half into rounds to make decorative edges.
- 3

Soak the vermicelli in boiling water until soft, then add the shredded carrots and blanch until soft as well. Finally, lift them out, cool them down, and put them into a bowl.
- 4

Add glutinous rice vinegar.
- 5

Add light soy sauce.
- 6

Add salt, sesame oil, and chili oil.
- 7

Stir evenly.
- 8

Cut the cucumber slices in half, but do not cut through the top ends. Arrange the separated halves around the plate to form a border like a flower.
- 9
