Exclusive Soy Sauce-Flavored Sweet and Sour Garlic
Whole garlic heads soak overnight in cooled salt water to shed their bite, then rest in an even blend of soy sauce, vinegar, and brown sugar.
Instructions
- 1

Add salt to water, bring it to a boil, then let it cool and set aside.
- 2

Peel the outer skin off fresh garlic, remove the head and tail, and soak it in cooled salt water. Try not to wash the garlic, and keep it as clean as possible when peeling the skin.
- 3

Take out the garlic that has been soaked in salt water overnight, with the root end facing down, and drain the water. The purpose of soaking in salt water is to remove the spiciness.
- 4

Mix soy sauce and vinegar in a 1:1 ratio, add an appropriate amount of brown sugar or white sugar, star anise, and Sichuan pepper for flavor, bring to a boil, then let it cool and set aside. Adjust the amount of sugar according to personal taste.
- 5

Drain the moisture from the garlic and put it into a clean jar.
- 6

Pour in the sweet and sour sauce, and finally pour in a little bit of high-proof white liquor.
- 7

Seal the bottle opening with plastic wrap and put the lid on.
- 8

Next, we just wait for time to bring about its changes.

This was marinated for 20 days and we tried one, it's already very flavorful. It will taste even better by the full month 😋
