Exclusive Soy Sauce Fried Noodles
Shanghai-style soy sauce fried noodles where parboiled noodles are tossed with soy sauce and oil, then wok-fried with scallions, carrot and crunchy bean sprouts for a savory, chewy finish.
Instructions
- 1

Cut the scallions into rings and set aside.
- 2

Prepare the vegetables you like.
- 3

Add water to the pot, bring it to a boil, and put in the noodles, cooking until the noodles float. (I am using Shanghai cold noodles.)
- 4

Take out the noodles, put them into a container, add an appropriate amount of salad oil and soy sauce, and mix evenly while fluffing them apart.
- 5

Heat the iron pan, pour in an appropriate amount of oil, and add the chopped green onions to stir-fry until fragrant.
- 6

Add the shredded carrots and mung bean sprouts and stir-fry.
- 7

After stir-frying the bean sprouts and shredded carrots until soft, add the greens and stir-fry.
- 8

Stir-fry the greens until soft, then add pepper, Sichuan pepper powder, and light soy sauce, and stir-fry evenly. For a stronger flavor, you can add an appropriate amount of salt at this step.
- 9

Add the noodles and stir-fry evenly.
