Exclusive Spicy and Sour Lemon Chicken Feet
Chicken feet are poached, cooled and bathed in a bright marinade of lemon, garlic and bird's-eye chili, yielding a tangy, fiery snack that only improves as it sits.
Instructions
- 1

Chicken feet should be bought fresh, trim off the nails, soak them for a while, and wash clean.
- 2

I cut each one into three pieces.
- 3

Pour cold water into the pot, add a little cooking wine, bring to a boil, and skim off the foam.
- 4

Prepare ginger slices, tied-up scallions, star anise, and Sichuan peppercorns.
- 5

Put cold water into the pot, add all the above seasonings, add a little cooking wine, and cook for fifteen minutes until fully cooked, according to personal taste.
- 6

Garlic slices, small chili peppers, lemon pitted and cut twice.
- 7

In a small bowl, add a small spoon of salt, a spoon of white sugar, three spoons of light soy sauce, four spoons of fragrant vinegar, a small spoon of steamed fish soy sauce, and a small spoon of oyster sauce, and mix well.
- 8

Place clean water in a small clean basin. I used purified water, and it's best if there are ice cubes. I used an ice pack. Put the cooked chicken feet into the ice water and soak for one hour.
- 9

Take out and drain the water.
- 10

Add small chili peppers, garlic slices, salt, and white sugar.
- 11

Pour in the sauce.
- 12

I also added a little bit of chili powder. If you don’t like spicy food, you can skip it. I put it in directly for health reasons, but you can also heat the chili powder in hot oil.
- 13

Place lemon slices on top.
- 14

Mix well and marinate for more than two hours to let the flavor soak in.
- 15

Prepare some cilantro when eating.
- 16

Just mix evenly.
- 17

The sour and spicy appetizing chicken feet are ready!
