Exclusive Spinach Tofu Egg Drop Soup
A homestyle soup of tomato, tofu, and spinach in a lightly thickened broth, finished with streaming beaten egg and starch slurry for silky ribbons and a gentle tang.
Instructions
- 1

3 bunches of spinach, tofu, tomatoes, eggs.
- 2

Cut the tomatoes into small pieces.
- 3

Cut the tofu into small cubes.
- 4

Cut the spinach into sections two fingers long.
- 5

An appropriate amount of starch slurry.
- 6

Separate the free-range chicken and set aside.
- 7

Heat a little oil in the pan, and stir-fry the scallions and ginger until fragrant.
- 8

Add the tomatoes and stir-fry them a couple of times.
- 9

Pour an appropriate amount of water and bring it to a boil.
- 10

Put the beans into boiling water.
- 11

Stir in the water-starch slurry. Mix until it's neither too thin nor too thick. I had just a little left and felt it would be a waste to pour it in, so I added it all. Well, it's slightly thicker than ideal. 😅 This will affect the formation of large curds when pouring in the egg mixture later.
- 12

Add the spinach.
- 13

Boil it once. Everything's fine up to this point 😅
- 14

Pour the beaten eggs in a circular motion.
- 15

When the egg strands float to the surface, add an appropriate amount of salt, light soy sauce, rice vinegar, white pepper powder (optional according to personal preference), and sesame oil for seasoning.
- 16

Stir well and serve in a bowl.
