Exclusive Stewed Old Duck with Chinese Yam
A hearty braise of old duck caramelized with rock sugar and soy sauce, then pressure-cooked with Chinese yam and goji berries until rich and tender.
Instructions
- 1

Half an old duck.
- 2

Cut into large pieces and put them into a pot with cold water. Add scallions, ginger, and cooking wine, and bring to a boil. Rinse clean with the water in the pot; do not use cold water to rinse, as it won't become tender.
- 3

Half an old duck, two pieces of Chinese yam, a small bag of goji berries.
- 4

Add some soy sauce, and stir-fry rock sugar until it turns caramel-colored.
- 5

Add the old duck and stir-fry.
- 6

After stir-frying, put it in the pressure cooker.
- 7

Put the scallion, ginger, and garlic seasoning pack into a tea bag.
- 8

Add soup, a bit of cooking wine, and a seasoning packet. The amount of soup is not limited; it depends on whether you want to drink the soup or eat the meat.
- 9

Cover with the lid and set for 20 minutes. Start cooking the soup.
- 10

Peel the Chinese yam and immediately put it into lightly salted water.
- 11

Cut the yam into irregular chunks, and wash the goji berries clean.
- 12

The soup is ready, use absorbent paper to soak up the oil.
- 13

Put the yam into the prepared soup and simmer for three to five minutes.
- 14

Once the soup is cooked, add goji berries and salt. A pot of nourishing, moisture-restoring old duck stewed with yam is now complete.
