Exclusive Thousand-Layer Glutinous Rice Meat Rolls
A hearty steamed roll of chewy glutinous rice and springy hand-chopped pork wrapped in soft tofu sheets, the rice pounded before steaming so every layer turns tender and sticky.
Instructions
- 1

Choose pork that is 30% fat and 70% lean.
- 2

Chop with a knife (I like to mince the meat with a knife; it feels firmer and springier when eaten).
- 3

Soak the glutinous rice for 3 hours (if you gently pinch it with your fingers it can break apart, this way the steamed glutinous rice will be very soft and sticky).
- 4

Soak the glutinous rice for 3 hours and drain the water, then crush it with a rolling pin to make the glutinous rice soft and tender during steaming.
- 5

Prepare the seasoning water: Put the chopped green onions, shredded ginger, Sichuan peppercorns, and star anise into a bowl, and pour in an appropriate amount of boiling water to soak for 30 minutes.
- 6

Start preparing the filling: add salt.
- 7

Add Sichuan pepper powder.
- 8

Add pepper.
- 9

Add chicken bouillon.
- 10

Add light soy sauce.
- 11

Add dark soy sauce.
- 12

Add cooking oil.
- 13

Add scallions, ginger, Sichuan peppercorns, star anise, and water.
- 14

Stir until the minced meat is fully blended with the liquid ingredients.
- 15

Then, pour the minced meat into the bowl of crushed glutinous rice.
- 16

Wear disposable gloves and mix evenly.
- 17

Press firmly with your palm, cover with plastic wrap, and refrigerate overnight.
- 18

The next day, wash the purchased sheets of tofu thoroughly.
- 19

Spread the glutinous rice and meat filling.
- 20

Smooth it with a scraper.
- 21

Finally, flatten all four sides.
- 22

Place the rolled glutinous rice meat rolls in a pressure cooker with water and steam them. Once the pressure valve rises, cook for 20 minutes.
