Exclusive Tomato and Potato Stew Rice
Silky tomato and potato stew rice where tomatoes are peeled, fried down with sugar and ketchup into a thick sauce, then simmered with tender potato over steamed rice.
Instructions
- 1

Cut a cross on the tomato, blanch it in boiling water, peel it, and then cut it into cubes.
- 2

Stir-fry the scallions and garlic until fragrant.
- 3

Add the diced tomatoes, and at the same time add salt and two tablespoons of sugar (this helps release the tomato juice faster), stir-fry a few times, then add two tablespoons of ketchup.
- 4

Stir-fry the tomatoes until they release juice, then add the potatoes.
- 5

After stir-frying, add light soy sauce and continue to stir-fry a few more times.
- 6

Add the water that hasn’t passed through the tomatoes, cook for an additional 5 to 10 minutes.
- 7

Stew until the potatoes are soft and mushy, then add the rice.
- 8

After stir-frying, reduce the sauce appropriately, add MSG, and sprinkle some chopped green onions.
- 9

Just serve it on a plate.
- 10

The potatoes are soft and glutinous, the rice absorbs the soup fully, and it has a pleasantly sweet and sour taste.
- 11

The flavor is very rich, and it's very appetizing.
